This weekend I was on a cleaning MISSION. I guess that what happens when you actually aren't hungover Sunday morning (duly noted!).
I needed to clean out my fridge and w/ all this leftover crap I made a really good brekkie. Egg casserole, what!
6-8 eggs (whisked)
1/2 cup chopped white onion
1 cup chopped broccoli
1 cup chopped fresh spinach
2 spinach and feta chicken sausage (fully cooked), cut into chunks
Mix it all together, pour into 8 x 8 glass baking dish & bake at 350 for 40-45 minutes (or until baked thru)
YUM YUM YUMMY.
